Home Away from Home: Cooking with a Twist

As a cultured woman, I love to eat my homeland food even when I’m abroad…but the thing is my palette doesn’t necessarily want the same old boring taste. So my husband, Jeff, and I love to do what we call ‘make-up cooking’, using food we grow to create new and exciting dishes. This way I can eat healthy while enjoying delicious, mouth-watering food…that touches my heart and soul. A well prepared dish, with fresh fruits and vegetables that says, “yes! I’m home”.

Roasted Pumpkin Seeds

Now not to waste anything and have a healthy appetizer, here is a great way to use the seeds from the pumpkin. Pumpkin seeds are packed with minerals, vitamins, and anti-oxidants. We chowed down on these while cooking our dinner…delicious.

Stuffed Pumpkin with Gungo Peas

Here we used Jamaican water crackers, instead of bread crumbs
Gungo peas for protein, sweet pepper, onion, garlic, celery, okra, and raisins

Mashed Pumpkin with Baked Chicken

Here we baked and mashed pumpkin instead of potatoes
Baked chicken breast garnished with carrots and onions
Callaloo as a side for fiber

Pumpkin Rice with Stew Pork

Here we used brown rice instead of white, cooked with pumpkin, carrots, and garlic
Stew pork…the other white meat
And as usual callaloo as a side

So instead of dieting try living a little by starting to eat fresh from the garden, healthy home cooked meals. All our meals always consist of fruits and lots of veggies. And the callaloo, carrots, onions, pumpkin, and gungo peas are home-grown. We also use olive oil and less or no salt and sugar. Salt is usually in most seasonings. I do hope you enjoyed your visit in our kitchen where home cooked meals are savored. Nyam, nyam.

Cerasee Time: Vine and Tea

Cerasee vine with its yellow flower

Native to Africa, the Mediterranean region, and the Middle East, cerasee grows wild in great abundance in Jamaica. The vine creeps on the ground, fences, plants, and trees and gives off a pungent odor when picked. However, this annoying vine is considered a medicinal herb and is vastly used in Jamaica. The vine and leaves are used to make tea, which purifies the blood and aids in the over all well-being of the body…including the skin and helps in controlling high blood pressure. As an herbal bath, cerasee is used to treat rashes, sores, eczema, and other skin problems.

Bitter Tea

The benefits of drinking cerasee tea out weights the taste, now with that said, the taste of the tea is bitter. Depending on how long the vine and leaves are boiled for, the more bitter and yellowish in colour the tea gets. However, sugar can be added to make drinking cerasee tea enjoyable.

Cerasee Time: Seeds

The flesh on the cerasee seeds are edible and sweet in taste. The pods found all over the cerasee vine, are first green, then turn orange when ripe. The pods then burst open, displaying several red seeds. Cerasee seeds stay dormant during the winter and spring up every where during summer.

Staying Healthy and Sexy at the Beach

Staying healthy at the beach is fun and extremely rewarding. Fun, because being at the beach is always fun, relaxing, and indulging. Rewarding…well who doesn’t want to show off their best beach body. So, here are a few tips to keep in mind while frolicking in the sand and sun. Trust me it will save you time and money.

 Take a Walk:

Walking plays a vital role in staying fit and your heart will love it! Walking in sand can be challenging, because it’s loose your feet will always work harder to keep you upright. In turn, walking develops your leg and calf muscles. Plus the rewards from walking are monumental in; keeping your heart in excellent condition, your brain alert, and burning fat.

Play a Game:

Another way to also get cardio is to play a sport or game, which requires using physical and mental abilities. In addition this can be an outlet for relieving stress and an absolutely great way to meet people.

                                                                Take a Swim:

One of the best times to take a swim is after; walking, lying out, and/or playing a game, because by then you will be hot, sweaty, and ready to cool off. Swimming is the best workout there is, because it requires so much energy to move through water and proper breathing techniques. Thus allowing for a complete body workout…both physical and mental…and makes for better stretching. I find swimming keeps me in top shape and clears my mind of all worries.

Exfoliate:

Every time I go beaching I exfoliate…using sand of course. It makes perfect sense to use sand instead of expensive store brands…which do the same thing. Exfoliating gets rid of dead skin and dirt, allowing for a better tan. It also leaves your skin feeling smooth and soft for partying later, but body lotion or oil must be used after exfoliating. When scrubbing pay close attention to knees, elbows, and feet. Be careful not to exfoliate excessively, on dry skin, or after lying out all day in the sun; the best time is during a morning or afternoon swim.

                                                  Lying Out:

‘Too much of one ting, gud fi nothing’, now with that said, be sure to use sun block lotion to protect your skin from sun damage when lying out. The sun does offer; vitamin D, a nice relaxing at-one-with-the-universe feeling, makes muscles look even sexier, and makes skin look flawless. So, if you do want a sun tan, what I’ve found out will definitely leave you speechless…coconut oil and aloe vera mixed together is the best sun tan oil ever! Coconut oil is wonderful to use as an oil base and aloe to protect the skin. Boom! Easy, cheap, and it works better than most store-bought products by providing a natural way to tan. In addition, another way to keep skin healthy and smooth is to drink lots of water.

Follow these friendly tips and you will definitely have ‘no worries’, just pure relaxation and vibes. Yeah man 🙂
